Chef Salad, Hubby Style

I was itching to make this recipe because of how it is achieved in our household.  It’s the dead of winter here in Idaho and yep!!!  I am going to make this salad before winter ends.  Yes, I am crazy, but the story is just too funny to wait until summer salad time.  And away we go 🙂

Sooo, at our house “The Man” normally likes a dinner consisting of 3 groups of food.  “Meat, Potatoes & Veggies”.  Over the years, I have finally been able to get him to have a “Salad” for dinner.  SHOCK!  However…. “the man” prefers plenty of meat and more of the “good stuff” than the actual lettuce.  So, I have compromised and here is how we do our chef salad.  (The man is so spoiled!)

Chef Salad, hubby style

  • Servings: 1 Large bowlful
  • Print

1/4 of a Head of Lettuce   (Yup, that’s all !!)

your favorite cheese, grated  (I usually stick with a medium cheddar)

Ham (any leftover.  I have also purchased a fully cooked ham steak and cubed it an put all of it in)

1/4 – 1/2 pound of Bacon, fried and crumbled.

1 cooked breast of Chicken, chopped. ( any leftovers will work too)

2-3 Eggs, boiled & chopped

1/2 pint of cherry tomatoes, cut in half

1-2 celery stalks, chopped *optional

1 carrot, grated *optional

1 bunch of Radishes, sliced

1/4 – 1/2 onion, chopped

1/2 cucumber, thinly sliced

1/2 can garbonzo (chickpeas)  beans, rinsed and drained

1 can kidney beans, drained & rinsed well.

1 handful of shelled sunflower seeds

pepper, dill weed and paprika to taste

your favorite salad dressing

HOW TO:

ok so here’s how “the man” prefers to do things.  This recipe is all about him.  It took every ounce of my cooking energy to get him to even “try” a salad for dinner.  and Now, every once in a while “the man” gets a hankering for a chef salad.  !!!   It’s almost like a success story to me.  

“The man” likes me to place every ingredient into separate little baggies and keep in the refrigerator until it is time to eat.  (Don’t ask)  this is his style.    At Least he’s eating a salad!

Once it’s dinner time, he steps in and takes over.  He gets a large plastic baggie and tosses everything together.  Trust me, I step out of the kitchen and let him  “play”.
