Homemade Chocolate Fudge Layered Cake

1 & 3/4 cups flour

1 cup Minus 1 tablespoon unsweetened cocoa powder

1 & 1/4 teaspoons baking soda

1/8 teaspoon salt

1 & 1/2 sticks softened butter (3/4 cup)

2/3 cup sugar

2/3 cup packed brown sugar

2 large eggs

2 teaspoons vanilla extract

1 & 1/2 cups buttermilk

frosting of your choice

HOW TO

oven at 350°

Grease 2 9-inch round cake pans.  Lightly dust with flour

In a large bowl combine flour, cocoa, soda and salt. Set aside.

in a second large bowl combine butter, sugar & brown sugar. Beat till fluffy.  Add eggs, one at a time, beating after each addition.  Add vanilla and buttermilk.  Now beat in the flour mixture slow speed. (My batter, at this point, was like chocolate mousse.  I wonder if that’s normal. Oh Well….) Divide into 2 cake pans.  Bake 25-30 minutes.  Cool completely before frosting. (I guess it was normal.  Cake turned out ok)
