I had to look up what a poblano pepper was. according to “google” it’s like a jalapeno except a jalapeno is approximately 5 times spicier than a poblano. And true to form. The poblano pepper was very very mild. ( I shoulda put in a couple seeded jalapeno’s for myself. My hubby isn’t much on spicy foods.)
1 tablespoon vegetable oil 1 pound ground beef 5 poblano peppers 3 tablespoons taco seasoning. ((I make my own Taco Seasoning Mix and you can obtain this recipe HERE )) 1 onion, diced 1 – 1 &1/2 cups Refried Beans 8 ounces shredded pepper jack cheese 9 X 9 square pan HOW TO: oven @ 350° Slice each pepper lengthwise and remove seeds. Arrange pepper in the 9X9 pan, cut side up. Fill each pepper half with refried beans. Set aside. Heat oil and add onion. Cook till softened ( 3 – 5 minutes ). Add ground beef. Cook through, crumbling beef as it cooks. Remove from stove and drain fat. Add seasoning to hamburger. Spread hamburger mixture evenly over the peppers. Sprinkle cheese over top. Bake 15-20 minutes or until the cheese is melted and bubbly.Stuffed Poblano Peppers
