Mint Chocolate Brownies

Yummy !  Who can resist brownies???  Allow yourself some extra time… as the cooling process alone takes 1 and a half hours.  

Mint Chocolate Brownies

1 box fudgey brownie mix

2 cups powdered sugar

8 tablespoons butter, soft…almost melted

2 tablespoons milk

dash of green food coloring

1 & 1/2 teaspoons of mint extract

6 ounces semi sweet chocolate chips

8 more tablespoons of butter.

 

 

 

HOW TO:

Bake your brownies as directed from the package.  Let cool in refrigerator for at least 30 minutes.

Combine powdered sugar, milk, softened butter, food coloring and mint extract.  Poor over cooled brownies and smooth over with the back of a spoon.  Refrigerate for another 30 minutes.

Melt chocolate chips and butter in the microwave.  Pour over mint layer carefully.  Tip pan to spread evenly.  Place in refrigerator for another 30 minutes to set.

I recommend keeping any leftovers in the refrigerator, covered.  When it is time to indulge, dip your knife in a hot glass of water, wiping excess water from knife between each sliced brownie.
