Oh my goodness ! Did I really just make these ??? I just told my hubby dearest that I intend to bring a dozen over to the kids house tomorrow and he’s already got tears in his eyes. heh heh heh. ( he’s still grumbling about it. LOL) I reassured him that I’ll definitely be making him another batch. He’s as spoiled as our grandson.
1 Cup Graham Cracker Crumbs 1 & 1/4 Cups Flour 1/2 Teaspoon Baking Soda 1/4 Teaspoon Salt (use 1/2 Teaspoon if using unsalted butter) 1/2 Cup Butter, softened 1/2 Cup Brown Sugar 1/3 Cup Sugar 1 Egg 1 Teaspoon Vanilla Extract 12 large Marshmallows, cut in half 2 Hershey’s (1.55 oz each) Chocolate Bars mini muffin pan that can make 24 mini muffins and cooking spray (like Pam) HOW TO: oven at 350° Spray muffin pan with cooking spray. set aside. In a bowl combine crumbs, flour, baking soda and salt. set aside. in a larger bowl blend butter, brown sugar, and sugar until creamy. Add egg and vanilla. Mix well. Add crumb mixture and combine until crumbly. Fill the mini muffin pan FULL of the crumb mix. Very gently pat in to make them full so that the crumb mix is even on top. This should make exactly 24 mini muffins. Bake for ONLY 8 minutes. Remove immediately. Now turn oven on to broil at high setting. Take a teaspoon-sized measuring spoon and press into the dough to make an indent for the marshmallow to sit in. Put half a marshmallow into each indent with the sticky side down and place under broiler. WATCH CAREFULLY as you are looking for the marshmallows to get golden brown and it will happen fast. Remove from oven. Place one square of the chocolate on top of each marshmallow. Cool and enjoy !!!S'more Cookie Cups

They are so good, you can’t just eat one. I had 4 dozen made along with 3 breads (banana, chocolate zucchini and cinnamon breads). The s’more cups were devoured first and gone within 24 hours.
