Chocolate Zucchini Bread

We are enjoying the zucchini that my hubby planted in his new hydroponic garden. (farming without soil).  We enjoy them almost every night with our dinner.  However,  here’s another way we can enjoy them….with chocolate.

Chocolate Zucchini Bread

  • Servings: 1 loaf pan

1 Cup Flour

1/2 Cup Cocoa Powder

1 Teaspoon Baking Soda

1/2 Teaspoon Sea Salt

2 Eggs, at room temperature

1/4 Cup unsalted Butter, melted & slightly cooled

1/4 Cup Vegetable Oil

3/4 Cup Brown Sugar, packed

1 Teaspoon Vanilla Extract

1 & 1/2 Cups Zucchini, packed & shredded (squeeze moisture out with paper towel or a tea towel)

1 Cup semisweet Chocolate Chips, divided ( 3/4 cup and 1/4 cup)

9X5 inch loaf pan


HOW TO:    oven at 350°

Grease loaf pan with lard.  set aside.

medium bowl combine:  flour, cocoa powder, soda and sea salt.  set aside.

Large bowl combine, but do not overmix:  eggs, butter, oil, vanilla extract and brown sugar.  Add dry ingredients.  combine.  Add zucchini. combine.  add 3/4 cup of chocolate chips.  combine.

Pour into prepared loaf pan.  Sprinkle remaining 1/4 cup chocolate chips over top.

Bake 50-60 minutes.  Test with toothpick for doneness.
