Chocolate Chip Muffins.

1 & 1/2 Cups Flour

1 Cup Sugar

1 teaspoon Baking Soda

1/2 teaspoon Salt

1 cup Water

1/3 cup vegetable oil

1 tablespoon Vinegar

1 teaspoon Vanilla Extract

1 Cup Chocolate Chips + extra for topping.

muffin baking pan with either paper muffins or you can grease each muffin slot.

HOW TO:  oven @ 350°

In a bowl combine:   flour, sugar, baking soda and salt.  set aside.

In a 2 cup measuring cup, combine:  water, oil, vinegar and vanilla extract.

Pour water mixture into the flour mixture.  Stir until combined.  Gently fold in about 1 cup of chocolate chips.

Pour mixture into prepared muffin baking pan.  Top with a few extra chocolate chips.

Bake until golden brown (30-40 minutes…depends on size of muffin).   Remove from oven and let the muffins rest in the baking pan for 5 minutes.  Then remove from baking pan and let cool on a wire rack.
