Cashew Chicken Rotini Salad

I made a couple of adjustments to this recipe because my family is just precious and special…  just sayin:   

So my family is kinda weird about nuts in foods.  This is why I set the cashews off in a seperate small bowl with a spoon so they can either add a couple nuts, add a lot of nuts or leave the nuts out of the salad completely….and I’m sure there will be that one “special” person who will just eat the cashews instead of the salad.  Also, I cut the grapes in half, lengthwise…because i just know someone will ask why aren’t the grapes cut into halves.  Yep… “special“…. That’s just how we roll around here.   🙂   … and I love them all anyway  ♥

Cashew Chicken Rotini Salad is a long name for a recipe.  I would have renamed it CCR Salad… but someone would probably think it was created by a music band.  It wasn’t,  I’m just lazy  😉

Cashew Chicken Rotini Salad

One 16-ounce package of rotini pasta (AKA spiral)

4 cups cubed chicken

20 ounces pineapple tidbits, drained

1 & 1/2 cups celery

3/4 cup thinly sliced green onions

1 cup seedless red grapes

1 cup seedless green grapes

6 ounces dried cranberries

1 cup ranch salad dressing

3/4 cup mayonnaise

2 cups salted cashews


Cook pasta according to the package. Drain. Rinse in cold water until pasta is cooled.  Set aside.

In a large bowl, combine the chicken, pineapple, celery, onions, grapes and cranberries.  Add the cooled pasta to chicken mixture.

In a small bowl combine ranch dressing and mayonnaise.  Pour over salad mixture.  Toss to coat.  Cover and refrigerate for at least one hour before serving. ( i thought the salad was a bit dry…maybe add a bit more dressing..  like  1 &1/2 cups of ranch dressing and 1 cup mayo)

Add cashews just before serving.  …. or not
