This was delish and pretty easy to make. We had mashed garlic potatoes and it went real well with the fish.

Hazelnut.Crusted.Halibut
1/4 Cup Hazelnuts
1/4 Cup Seasoned Bread Crumbs (I only had plain bread crumbs, so I added Creole Seasoning to the bread crumbs. I make my own Creole Seasoning ……….and you can find the recipe HERE
2 Halibut Fillets
1/4 Teaspoon Salt
1 Tablespoon Olive Oil
6 Tablespoons Butter, divided ( 1 tablespoon and 5 tablespoons)
3 Tablespoons Vegetable Broth
HOW TO: oven @ 500°
In a food processor, pulse the nuts and bread crumbs until finely ground…but Not into a paste. Sprinkle nut mix into a shallow dish. Set aside.
Season the halibut on both sides with salt. Then gently press One Side of the halibut into the nut mixture. Set aside.
Heat olive oil and 1 tablespoon of butter in an ovenproof skillet over medium to high heat. Place the halibut NUT-SIDE-UP into the skillet. Cook till halibut begins to brown (3-4 minutes). Turn halibut over and place into the preheated oven. Bake nut-side-down till halibut flakes easily with a fork (about 5 minutes).
Melt 5 tablespoons of butter until it turns a nut brown color then stir in the vegetable broth and bring to a simmer.
Drizzle the browned butter sauce over the halibut after the halibut is fully cooked/baked.
