So before I can even Get the muffins in the oven, hubby dearest is standing next to me eating the chocolate chips that I had measured out. Him and his chocolate fix.
- 1/2 cup Vegetable Oil
- 1 cup Sugar
- 1/2 cup Milk (I used 2%)
- 2 large Eggs, slightly beaten
- 1 teaspoon Vanilla Extract
- 2/3 cup Sour Cream
- 2 cups all purpose Flour
- 1/2 cup Cocoa Powder
- 1 & 1/2 teaspoons Baking Soda
- 1/2 teaspoon Salt
- 2 cups semisweet Chocolate Chips, divided (1 & 1/2 cups and 1/2 cup) I used regular sized, and about a half cup of mini, along with white chocolate chips..of which I put a single white chocolate chip on each muffin.
HOW TO: Oven at 375 degrees.
Heat oven. line 18 muffin cups with liners. Set aside.
In a large bowl, whisk: oil, sugar, sour cream & milk. Stir in eggs and vanilla. Mix till well combined. Set aside.
In a medium bowl whisk: flour, cocoa powder, soda and salt.
Combine the oil mixture to the flour mixture until just barely combined. Stir in 1 & 1/2 cups of the chocolate chips.
Fill muffin liners 2/3 – 3/4 full. Sprinkle remaining chocolate chips onto tops of batter.
Bake @ 375 degrees for 18 minutes…. poke with a toothpick to make sure muffins are done.
