Simple and delish.
CRUST: 1 & 1/2 cups all purpose flour, 1/3 cup powdered sugar, 3/4 cup softened butter (or margarine)
FILLING: 1 & 1/2 cups sugar, 3 eggs, 1/4 cup lemon juice, 3 tablespoons all purpose flour
TOPPING: 1/3 cup powdered sugar
HOW TO: oven at 375 degrees. As far as making these bars, it’s simple and goes quick. I think I spent maybe 15-20 minutes making them. Then, the baking and cooling time takes the longest.
Pre-heat the oven. Grease a 9X13 baking pan.
Start with the crust by combining the flour, powdered sugar and butter. When combined, pat the dough into the baking dish to form the crust. This was trick because the crust is not very thick, so i had to work it a bit to cover the base of my baking dish.
Bake the crust in the oven for at least 20 minutes. (I took it out at the 20 minute mark and wasn’t pleased…so I put it back in for an additional 5 or 6 minutes until I saw a bit of browning on the crust.
Remove the crust from the oven….but LEAVE THE OVEN ON. (we aint done yet) 🙂
Now working from the filling ingredients: in a large bowl, whisk sugar, eggs, lemon juice and 3 tablespoons flour. Whisk until the grains of sugar are smooth. This took a bit of whisking to get it well combined. When well combined, pour the filling over the crust and shove it back into the hot oven for 20-25 minutes until the filling sets. I used the complete 25 minutes and it worked out well.
Remove from oven and cool completely. After the bars are cool you can sprinkle the powdered sugar over them. The recipe called for 1/3 cup of powdered sugar…. but i maybe used 2 teaspoons and shook that over the lemon bars with a small strainer.
The bars are good and next time i may add a bit of lemon zest to the filling part to give it just a zip.
