Beef and Broccoli
about a 5 pound beef chuck roast, sliced into strips
about a cup of beef broth (I used a bit more)
1/2 cup soy sauce
1/3 cup brown sugar
1 bell pepper of your choice, seeded and cut into strips
1 tablespoon sesame oil
2 large garlic cloves, minced
2 tablespoons cornstarch
4 tablespoons of crock pot juice after meat is cooked.
about 2 cups frozen broccoli florets. (I think I had about 3-4 cups in this recipe)
white rice, cooked
HOW TO
in crock pot, whisk together: beef broth, soy sauce, brown sugar, sesame oil and garlic. Place beef and bell pepper in crock pot. Toss to coat. Turn crockpot on low and cook for at least 6 hours…maybe more depending on thickness of your slices.
When meat is cooked, in a small bowl, combine cornstarch and cooking liquid to create a slurry. Pour into crock pot and gently stir to combine. Add the frozen broccoli and cook on low for an additional 30 minutes.
Serve with the cooked rice.
