Mexican Square

  • Servings: a 9 X 9 pan or double the recipe and use a 9 X 13 pan

1 can (approximately 16-oz) Refried Beans

1 Pound Hamburger

1/4 Cup Chopped Onions

1 small can green chilies (approximately 4-ounces)

1 small can Sliced Black Olives (approximately 2.25 ounces)

Doritos, enough to crumble one layer in pan (approximately 1/4 of a smaller bag)

Either:  1 cup Taco Sauce (however hot you prefer)  OR  1 package Taco Seasoning, prepared as directed on its package (you may need to add a small amount of water with the seasoning package)…  I prefer the Taco Sauce.    You may prefer the taco seasoning and i’m just letting you know that I make my own taco seasoning and you can obtain that recipe  HERE

Grated Cheese of your choice.  About a cup or as much as you want

Fresh tomato, diced into fairly large chunks.

HOW TO

Oven at 350°  Spread refried beans in bottom of pan and place in oven while preparing everything else.  Fry out hamburger.  Drain fat.  Add to fried hamburger:  onions, chilis, olives and taco sauce.  Bring to boil and simmer for 10 minutes.  Take refried beans out of oven and pour hamburger mix over beans.  Do not stir…just kinda spread it like a layer.  Top with cheese.  Place back in oven until bubbly from mixture.  Remove and add a layer of crushed Doritos to top.  Again, do not stir.  Bake 10 more minutes.  Remove from oven and cover with fresh tomato chunks just before serving.
