INGREDIENTS 3/4 Pound of Frozen Prepared Meatballs. Not Italian Seasoned. 1 Red Pepper, cut into chunks 1 Yellow Pepper, cut into chunks 1/4 Cup Water 1/4 Cup Apricot Jam 1/4 Cup Kraft Catalina Dressing 2 tablespoons soy sauce 3/4 Teaspoon Ground Ginger 3/4 Teaspoon Garlic Powder 3 Cups Cooked Rice. ( I use about 1 – 1.5 Cups of raw uncooked rice) HOW TO: Combine all ingredients EXCEPT the rice. Cook for about 10 minutes on Medium stirring occasionally. Increase heat to a medium – high and cook 8-10 minutes more until the sauce thickens and the meatballs are heated through. Serve with rice and maybe a side of your favorite vegies.
