Pumpkin Loaf Bread

The house will smell amazing while this is baking!  After the holidays (January-ish), a lot of holiday items go on sale.  That’s a gimme.  One item that usually is on sale, is the canned pumpkin.  My hubby, who does my grocery shopping (bless him!), came home with a couple cans of pumpkin.  Soooo, I thought I’d give this recipe a whirl.  Enjoy!

Pumpkin Loaf Bread

1 & 1/2 cups sugar

2 eggs

1/2 cup oil

1 cup pumpkin

1 & 3/4 cups of Flour

1 teaspoon baking soda

1/4 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon cloves

1/2 teaspoon nutmeg

1/4 teaspoon allspice

1/3 cup water

optional… 1/2 cup walnuts or pecans

optional… 1/2 cup raisins

HOW TO

oven at 350°

Too easy.

grease and flour one loaf pan.  Set aside.

In a large bowl, add all ingredients in order given stirring after each addition.  Pour into your prepared loaf pan and bake for 1 hour.  Test done-ness with a knife or toothpick.  It should come out clean if the bread is done baking.  If not, put back in oven and test every 5 minutes for done-ness. 

I did a bit of butter, honey and a sprinkle of cinnamon over my two pieces.  Hubby loved the bread.  Enjoy!  Oh and i didn’t have the nuts or raisins on hand.
