Chocolate Chip & Pecan Cookies

 

The first time I made this recipe …  (many moons ago) … my son loved it.   Many many years later, while my son was in the military, we received a phone call.  “Mom, send me some cookies”.   I sent a double batch of cookies to him.  And, you know how a care package can get knocked around no matter what delivery service is used, I carefully packed the box.  First I wrapped each large cookie indivdually in tin foil.  Then in plastic.  And, instead of using paper or bubble wrap or any packing paper, i filled baggies of popcorn and used that instead of paper.  

Needless to say, we received word from our son.  He received the box in good order.  He was “Swarmed” by fellow officers.  He told us that he only made it to the picnic table area.  His fellow comrades and him devoured the entire content then and there.   He also said that later in the day, he was not feeling all that great because of the volume of cookies he ate in one sitting.  

It is the only time I was happy he felt ill.  🙂

Chocolate Chip & Pecan Cookies

  • Servings: 3 - 4 dozen

2 sticks of Butter ( OR 1 cup margarin OR a combo of both measuring out to 1 cup) ( I did a combo of both)

3/4 cup Brown Sugar

1 teaspoon Baking Soda

1 teaspoon Vanilla Extract

3/4 cup chopped Pecans

3/4 cup Sugar

18-ounces of Chocolate Chips (  that’s 2 & 1/4 cups)

2 Eggs

2 & 1/4 cups Flour  (I ended up adding an additional 1/4 cup or so to the batter.  The batter just seemed so sticky and hard to work with.  They turned out great 

1/2 teaspoon Salt

HOW TO:

oven at 350°

sooo easy.  Combine all ingredients.  Drop spoonful of dough on baking sheet not to close together. I used a bit of flour on the palm of my hand…near the ball part under the thumb to push down the cookie dough.  It works much better and the dough doesn’t stick to your hand.  And yep,  they turned out just fine !

Bake 10-20 minutes, depending on size of your cookie.
