7 Layer Salad

This is such a refreshing salad and it’s really easy.  I tried to get a picture of the layers, but it didn’t work out to well.  

7 Layer Salad

  • Servings: 2-4 people

1/4 head of lettuce (can use more if needed)

a few slices of red onion, very very thinly sliced (some days i omit this layer

and call it a 6 layer salad )

10 ounce package frozen peas, thawed or partially thawed

1 – 2 cups mayonnaise

1 teaspoon or more of sugar   

1/4 – 1/2 pound of fried bacon, crumbled

1 cup or more grated cheddar cheese


use a 8X8 or 9X9 square type pan.

in a small bowl combine mayonnaise and use sugar sparingly.  You just want to use enough sugar to cut the mayonnaise a bit.  (When I made the mayonnaise mix, I used 2 cups of the mayonnaise and then it took about 3 teaspoons of sugar before it was satisfactory.  So, you may need more than just the 1 teaspoon of sugar.)

Then just do layers of each.  Starting with the lettuce.

Refrigerate covered until ready to serve.
