I don’t usually have 4 pounds of chicken breasts on hand as it is just me and the hubby. Can you imagine eating 4 pounds of chicken with just 2 peeps? Ok there is always leftovers….right? -.- So I included a breakdown of ingredients that will help figure out how much to add to chicken from 1 to 4 pounds. (Towards the bottom of the recipe)… That or make it with 4 pounds of chicken…. and enjoy the leftovers. Just sayin…
Chicken Verde Crock Pot
4 pounds boneless skinless chicken breasts, thawed and chopped.
32 ounces (4 cups) salsa verde (I used mild. I would prefer hot, but hubby dearest would probably cry)
2 tablespoons oregano
2 teaspoons garlic powder
garnishments: cooked spanish rice, avocado, refried beans, more hot sauce and tortilla chips of some sort
HOW TO
just dump the chicken, salsa and spices in a crock pot. Submerge the chicken. Set on low. Cook for at least 4 hours. I start making this early morning and it’s fine even after 9 hours in the crockpot.
Serve with the garnishments listed above, or anything else you fancy.
(1 pound of chicken: use 8 ounces (1 cup) of salsa verde, 1/2 tablespoon oregano, 1/2 teaspoon garlic powder)
(2 pounds of chicken: use 16 ounces (2 cups) of salsa verde, 1 tablespoon oregano, 1 teaspoon garlic powder)
(3 pounds of chicken: use 24 ounces (3 cups) of salsa verde, 1 & 1/2 tablespoons oregano, 1 & 1/2 teaspoons garlic powder)
