Taco Salad

So refreshing.  We have one nice day here in Idaho with temps in the high 60’s, I just had to make this refreshing salad.   (We’ll probably have a snow event tomorrow….just kidding)  But that’s Idaho for ya!

Taco Salad

SALAD

1/2 pound of hamburger

1/2 package taco seasoning + extra for dressing (I make my own taco seasoning and you can obtain that recipe HERE  )

1/2 head of lettuce

4 ounces cheddar cheese, grated

1/2 can kidney beans, drained & rinsed

1/2 onion, chopped

2 medium tomatoes, chopped

1/2 bag doritos, medium crushed

DRESSING

8 ounces of thousand island dressing

2 tablespoons sugar

1 tablespoon (or more to taste) taco seasoning

1 tablespoon taco sauce

HOW TO

brown hamburger. drain fat. (I usually set it on paper towel to drain as much grease as possible.)   Add half the package of taco seasoning.  Refrigerate.

Prepare salad portions (lettuce, cheese, beans, onion & tomatoes) and store in separate baggies & refrigerate until ready to eat.

Prepare Dressing.  Mix thousand island dressing, sugar, 1 tablespoon of taco seasoning and the taco sauce.  Refrigerate until ready to eat.

When ready to eat, combine hamburger and salad.  Serve with the dressing on or off the salad.
