Kielbasa Rice Broccoli Skillet

1/2 tablespoon olive oil

1 polka kielbasa, sliced

1 small onion, or half a large onion,  chopped

1 small bell pepper, diced

1/2 teaspoon salt

1/2 teaspoon pepper

2 garlic cloves, minced

1 cup uncooked white rice

28 ounces chicken broth or stock … I make my own chicken broth and you can find the recipe   HERE

2 cups broccolie florets, cut to bite size

2 cups cheese ( i used a medium cheddar)

HOW TO

in large lidded fry pan, heat oil.  Add kielbasa for 3-4 minutes.  Remove kielbasa with slotted serving spoon.  Brown onion and peppers in fry pan till translucent.  Add rice.  Stir for 2 more minutes.  Add 2 cups of broth and bring to a boil.  Reduce heat and cook for 15 minutes.  Add broth as needed to keep rice moist. (I used all but one cup of the broth during the cooking.)  Add broccoli to top and cover.  cook 5-10 minutes till rice is tender.  stir in the salt, pepper, kielbasa and broccoli and ONE cup of the cheese.  Top with the other cup of cheese.  Cover with lid and let it set for 2 minutes till cheese is melted.
