Taco Soup - Crock Pot
1 onion, chopped
16 ounce can Chili Beans, drained
15 ounce can black beans, drained
15 ounce can whole kernel corn, drained
8 ounce can tomato sauce
12 ounces chicken broth … I make my own chicken broth and you can find the recipe HERE
20 ounces ( 2 10-ounce cans) of diced tomatoes with chilies DO NOT DRAIN
1 packet of taco seasoning ( I actually make my own Taco Seasoning Mix and you can obtain that recipe here
3 chicken breast, boneless & skinless, thawed and chopped (salt, pepper and garlic powder to season chicken)
shredded cheddar cheese to garnish
sour cream to garnish
tortilla chips to garnish & use as a side dish. Yummy!
HOW TO
Set crock pot temperature to low. Add chicken and season with salt, pepper and garlic powder. Go lightly with the seasoning as you can adjust to your taste preference once soup is ready to eat. Dump everything into the crock pot EXCEPT the cheese, sour cream and tortilla chips. Stir. Cover. Let it cook for 7 or so hours. Adjust with more salt, pepper or garlic powder if needed. Serve with a side of cheddar cheese, sour cream and tortilla chips.
