Baked Candied Yams

5 medium Yams

8 Tablespoons Salted Butter (can use margarine)

1 Teaspoon Cinnamon

1/2 Teaspoon ground nutmeg

1/4 teaspoon ground clove

1/4 teaspoon ground ginger

1 cup Sugar

1/4  cup Brown Sugar

1 Tablespoon vanilla extract

HOW TO:     oven @ 350°

Wash Yam.  Peel and chop yam about 1/2 inch thick chunks.   Place in a 9 X 13 bake dish.

In small sauce pan, melt butter.  Add everything to melted butter EXCEPT the vanilla extract.  Combine.  When all combined, remove from heat and then add the vanilla.  Pour over yams and coat yams well.  Cover dish and bake for 30 minutes.  Remove from oven, baste.  Re-cover and bake for an additional 15-20 minutes.  Remove and rest them 10 minutes.
