Chocolate Chip Muffins

1 cup Buttermilk (or use 1 cup milk + 1 & 1/2 teaspoons of vinegar)

1/2 cup vegetable oil

2 large eggs

1 cup sugar

2 teaspoons vanilla extract

3 cups all purpose flour

4 teaspoons baking powder  (i think this is too high.  I’ll make the recipe again and reduce this measurement.  I’ll let you know !!)

1/4 teaspoon salt

2 cups chocolate chips

a muffin tin, paper muffin liners (or cooking spray, like Pam) and a plastic spatula


oven at 425°  *then lowered *

spray muffin tin with cooking spray  OR line with paper muffin liners

in large bowl, combine:  buttermilk, oil & eggs.  mix with the spatula

add sugar & vanilla

mix in the flour, half cup at a time.  Fold in baking powder

Fold in chocolate chips

Pour batter into muffin tins.  (If you want sky high round muffins, fill all the way to the top.  If you want smaller ones, fill only 3/4 of the way up.

Bake for 5 minutes at 425°  then lower the temp to 375° & bake for an additional 10-12 minutes.
