Meatloaf

 

For some reason, my Dad hated meatloaf.  I told my Mom that I added a half pound of sausage to mine.  She went and did the same.   My dad said it added more flavor to the meat.  (Secretly, I think he still just hated meatloaf)  😀   I would tell them to come for dinner and I’ll serve you my meatloaf.  Yep, can still see my dad rolling his eyes!

Meatloaf

  • Servings: 1 loaf pan 2-4 people

1 pound Hamburger

1/2 pound Sausage (not sage, just use original)

1/2 cup bread crumbs (i have substituted with 10 ritz crackers, crushed.  and since the ritz crackers are salted, I omitted the 1/2 teaspoon of salt)

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon dried rosemary

1 teaspoon dried thyme

1/8 pepper

1/2 teaspoon of salt

3/4 cup tomato sauce (or about half a can)

HOW TO

oven at 325°

combine all EXCEPT the tomato sauce.  Form to fit in a loaf pan. I make a groove that runs the length of the loaf to hold the tomato sauce.  Bake covered 35 minutes.  Remove and pour the tomato sauce in the groove you formed. It’s ok if the sauce runs down the sides.  Bake uncovered for an additional 15-20 minutes.
