Crab Salad


Since I am not a fan of crab, I have to rely on my hubby to let me know what he thought of this recipe.  Now, he’s not a fan of pasta, but I am.  So it was an “interesting event”.  Here’s his thoughts:  This is really good.  Nice Salad!   My thoughts:  What an Easy easy recipe to make.  I loved that part of it.  I loved the pasta…. and tolerated the crab part…mainly by avoiding it!  Overall, I thought it was still an o.k. salad.

Crab Salad

2/3 package of the curly macaroni noodles

1/2 pound cooked crab meat, shredded (I took a fork and dragged it through the meat length wise, which left very long lengths.  So, I then took a knife and cut the lengths to about 1-2 inches.  That seemed to work great!)  The meat is very easy to work with and shredded apart nicely.

1 avocado

1 teaspoon lemon juice

1 tablespoon minced onion

1/2 cup green goddess salad dressing (We ended up using more than 1/2 cup as the salad seemed a bit dry)


Cook noodles. Cool.

When ready to eat, dice avocado and carefully sprinkle with lemon juice. coat the avocado.  then combine all ingredients & serve

I served this salad with a side of soup.
