Zucchini Bread


This is my mom’s recipe.  Where she got it?  Who knows.  Sure makes the house smell wonderful while it’s baking!

Zucchini Bread

  • Servings: 2 loaf pans

2 teaspoons vanilla extract

3 eggs

1 cup vegetable oil

2 cups uncooked zucchini, shredded & drained

1 & 3/4 cups sugar

1/4 teaspoon baking powder

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon salt

1 cup chopped nuts, optional

2 cups flour

2 loaf pans & cooking spray (like Pam)


oven at 350°

In a large bowl combine:  vanilla, eggs, oil & zucchini.

Add remaining ingredients.

Spray loaf pan bottoms with cooking spray.

Pour batter evenly in the 2 loaf pans & bake for 1 hour.
