I found this recipe in my paternal grandmother’s cookbook… you know, the cookbook with the avocado green cover and the yellowed crumbling pages.
The recipe “claims” 4 dozen but actually due to the size of My cookies, I didn’t quit reach 4 dozen. 🙂
Chocolate Chip Oatmeal Cookies
1 cup flour LESS 2 TABLESPOONS
1/2 teaspoon salt
1/2 teaspoon soda
1/2 cup chopped pecans
1 cup Oats (NOT THE INSTANT TYPE)
1/2 cup shortening
6 tablespoons sugar
6 tablespoons brown sugar
1 egg, beaten
1 package chocolate chips
1/2 teaspoon vanilla
oven at 375°
grease baking sheets and set aside. ( I didn’t do this, I used Parchment Paper)
in a medium bowl, combine flour, salt, soda, pecans and oats. Set aside.
in a seperate bowl, cream together: shortening, sugar and brown sugar. Add egg. Blend well. Add flour mix. Mix thoroughly. Add vanilla.
Drop by tablespoon on greased baking sheets.
Bake 10 minutes or until browned.
